We Love Visitors!


Today, my cousin, Brooke, and her husband, Mac, and baby, Foster, came to visit us. They live in Cedar City, UT, and came up to Washington and Oregon this week for business. We were so excited to see them after Brooke called to tell me they'd have time to hang out today!

They ate a quick lunch with us and then went to church with us. I loved holding their 2-month-old cutie and got my newborn fix for the day! :) Brooke was so nice to read to Tyler all through sacrament meeting. Then after we got home, Mac was an amazingly good sport who went above and beyond the call of duty when he sang along to any book as Tyler strummed his ukulele! We like you lots! They stayed for dinner afterwards and we had our designated "easiest" crock pot chicken dinner. Here's the recipe if anyone would like to try it:

Italian Chicken

2 boneless, skinless chicken breasts
1/2 cup Italian salad dressing (we love Newman's Own Italian Dressing)
1 tsp. Italian seasoning (or mix basil, oregano, crushed red pepper and garlic powder)
1/2 cup grated Parmesan or Romano cheese (I leave this out but it is yummy)
4 potatoes, peeled and cut in wedges
baby carrots (as many as you like)
1 onion, cut in chunks

Place chicken in bottom of crock pot. Sprinkle with half of the Italian dressing, spices, and the grated cheese. Put the potatoes, onions and baby carrots on top and around the chicken. Sprinkle with the rest of the dressing, spices and cheese. Cook on Low for about 6-8 hours, or until the chicken and potatoes are tender. We love the dressing so much that sometimes we pour extra on as we eat.


It was a fun day for us and we are looking forward to seeing them again. Next time we'll have to get their 5-year-old son together with our boys to play. (He was at home with Brooke's parents) Thanks for coming you guys! You are welcome anytime!

I'll have to check it out. I love the ease of crock pots! By the way, I would LOVE to visit you guys. We must work it out sometime!

We LOVE LOVE LOVE this recipe and have eaten it almost monthly ever since it was printed in the Dawson Creek Relief Society cookbook years ago. Skye and I refer to it as "The Guptill's Chicken."
